Add support for phpX.Y bin name format

This makes easier to run configure.php with a versioned PHP executable. Also removes php5* bin names, as PHP 5 is not supported.

For example:

- php8.5 doc-base/configure.php --with-php=$(which php8.5)
+ php8.5 doc-base/configure.php

Using the constant PHP_BINARY is a good idea. I'll work on that.

I use the option --with-php with no issues. I have the https://deb.sury.org/ packages installed and they have the phpX.Y format, and sometimes I set the php package to an older version, that's why I use the option --with-php.

Even if the constant PHP_BINARY work for most cases, I think it's good to still have the option --with-php.

I have the same use case as Mauricio (custom PHP build, Sury-style setup, or just a non-default php symlink or binary) — and just updated #356 with this: "bare --with-php" now defaults to PHP_BINARY, "--with-php=php8.5" finds the binary in PATH, "--with-php=/path/to/php" is the explicit override. PHP_BINARY for the common case, the rest stays as it is.
