Adds opt-in ClassGraph 5 support to the OpenAPI scanners, including Jakarta variants. ClassGraph 4 remains the default, preserving existing behavior and Java requirements.
Applications on Java 17+ can opt in by overriding the ClassGraph dependency to 5.0.0.
Tested both versions, including resource discovery and class loading.
